Production:

Careful analysis and tasting of the grape berries to determine the optimal harvest time.

In 2020, approximately 300 bottles were produced, the result of meticulous selection both in the vineyard and in the cellar; hand-harvested in crates.

A small plot of land with hundred-year-old vines, situated on a steep slope, making it almost a heroic viticulture.

Vinification:

Soft destemming and crushing, with prolonged skin contact allowing for a slow dissolution of high-quality compounds from the skins into the wine.

Aging in wood for a duration appropriate to the wine’s characteristics, monitored through organoleptic analysis and polymerization level control.

The wine is not clarified but is naturally clarified through racking.

Bottled under inert gas, followed by bottle aging in suitable storage conditions.
