Production:

Careful analysis and tasting of the grape berries to determine the optimal harvest time.

In 2020, approximately 1,200 bottles were produced, the result of meticulous selection both in the vineyard and in the cellar; hand-harvested in crates.

Vinification:

Soft destemming and crushing, followed by medium to long maceration in wood.

Aging in wood for a duration appropriate to the wine’s characteristics, monitored through organoleptic analysis and polymerization level control.

The wine is not clarified but is naturally clarified through racking.

Bottled under inert gas, followed by bottle aging in suitable storage conditions.

Organoleptic characteristics:

Color: The wine has a very intense color.

On the palate, it has a soft attack, a long and full mouthfeel, and finishes with well-present yet velvety tannins.
